The Sugarcane process of decaffeinating coffee compared to other decaffeinating processes leaves a pleasant, sweet flavor. You can expect flavor notes of cherry, citrus, caramel and sugar cane. It has medium body with bright acidity. This process uses ethyl acetate, an organic compound found in sugar cane, to remove 97% of the caffeine from coffee beans. The Valle Del Cauca region is located in a biological Conservation Corridor between Tatama National Park and "serrania de los paraguas". The farmers here are strongly aware of the importance of the preservation of natural resources, water management and friendly environmental practices.
